Ingredients

For the Red Velvet Cake Layer:

1 ½ cups all-purpose flour

1 cup granulated sugar

1 tsp baking powder

½ tsp baking soda

1 tsp unsweetened cocoa powder

½ tsp salt

1 cup vegetable oil

1 cup buttermilk, at room temperature

2 large eggs

2 tbsp red food coloring

1 tsp vanilla extract

1 tsp white vinegar

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, chopped

For the Topping:

1 cup fresh strawberries, sliced

¼ cup strawberry glaze (optional)

Whipped cream (for garnish, optional)

Instructions

Prepare the Red Velvet Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

      - In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cocoa powder, and salt.

        - In another bowl, mix together the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until well combined.

          - Gradually add the wet ingredients to the dry ingredients, mixing until smooth.

            - Pour the batter into the prepared cake pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.

              Make the Cheesecake Filling:

                - In a large mixing bowl, beat the softened cream cheese until smooth.

                  - Gradually add the powdered sugar and vanilla extract, beating until creamy.

                    - In a separate bowl, whip the heavy cream until stiff peaks form.

                      - Gently fold the whipped cream into the cream cheese mixture.

                        - Finally, fold in the chopped strawberries, ensuring they are evenly distributed.

                          Assemble the Delight:

                            - Once the red velvet cake has cooled, carefully slice it in half horizontally to create two layers.

                              - Place the bottom layer of the cake on a serving plate. Spread half of the cheesecake filling evenly on top.

                                - Place the second layer of cake on top of the filling and spread the remaining cheesecake mixture over it.

                                  - Smooth the top and refrigerate for at least 3 hours to allow the cheesecake to set.

                                    Add the Toppings:

                                      - Before serving, top the cheesecake with sliced fresh strawberries and drizzle with strawberry glaze if desired. Add whipped cream dollops for extra indulgence.

                                        Serve and Enjoy:

                                          - Slice the cake into wedges and serve chilled. Enjoy the layered flavors of red velvet and creamy strawberry cheesecake!
