Ingredients
  

1 lb fresh crab meat (preferably lump crab)

1 lb shrimp, peeled and deveined

4 cups seafood stock

1 cup heavy cream

1 cup dry white wine

1 medium onion, finely chopped

3 cloves garlic, minced

2 stalks celery, finely chopped

1 medium carrot, finely chopped

1/4 cup tomato paste

2 tbsp olive oil

1 tbsp butter

1 tsp Old Bay seasoning

1/2 tsp cayenne pepper (adjust to taste)

Salt and freshly cracked black pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté the Vegetables: In a large heavy-bottomed pot, heat the olive oil and butter over medium heat. Add the chopped onions, celery, and carrots. Sauté for 5-7 minutes until the vegetables are tender and translucent.

    Add Garlic and Tomato Paste: Stir in the minced garlic and tomato paste, cooking for another 2 minutes, until fragrant.

      Deglaze with Wine: Pour in the white wine and scrape up any bits from the bottom of the pot. Allow it to simmer for about 5 minutes to reduce slightly.

        Add Stock and Seasoning: Pour in the seafood stock and bring the mixture to a gentle boil. Add the Old Bay seasoning, cayenne pepper, salt, and pepper.

          Incorporate Crab and Shrimp: Reduce heat to low and add the crab meat and shrimp. Let the soup simmer for 10-15 minutes, until the shrimp are pink and cooked through.

            Blend for Smoothness: Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier bisque, blend only half and leave the other half as is for texture.

              Stir in Cream: Return the soup to a low heat and stir in the heavy cream. Heat for another 5 minutes, ensuring it's warmed through but not boiling.

                Final Seasoning: Taste the bisque and adjust seasoning as necessary.

                  Serve: Ladle the bisque into bowls, garnish with fresh parsley, and serve with lemon wedges on the side for a fresh squeeze of acidity.
