8 lamb chops (about 1 inch thick)

4 medium-sized Yukon Gold potatoes, quartered

2 large sweet onions, sliced into wedges

4 tablespoons olive oil, divided

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lemon

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Lamb: In a bowl, mix 2 tablespoons of olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, lemon juice, lemon zest, salt, and pepper. Marinate the lamb chops in this mixture for at least 30 minutes, preferably 2 hours for maximum flavor.

      Prepare the Vegetables: In a large mixing bowl, toss the quartered potatoes and onion wedges with the remaining 2 tablespoons of olive oil, salt, and pepper. Ensure they are evenly coated.
