4 bone-in pork chops (about 1 inch thick)

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

1 tablespoon olive oil

Salt and pepper, to taste

Zest of 1 lemon

Juice of 1 lemon

Fresh rosemary sprigs for garnish (optional)

Prep the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper. Let them sit at room temperature for about 15-20 minutes.

    Make the Garlic Butter: In a small bowl, mix together the butter, minced garlic, chopped rosemary, lemon zest, and lemon juice. Set aside.

      Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

        Sear the Pork Chops: Carefully add the pork chops to the hot skillet. Sear them for about 4-5 minutes on one side without moving them, until they develop a nice golden crust.

          Flip and Add Butter: Flip the pork chops and immediately add the garlic butter mixture to the skillet. As the butter melts, baste the pork chops with the buttery mixture, cooking for an additional 4-5 minutes until cooked through (internal temperature should reach 145°F).

            Rest the Pork Chops: Remove the pork chops from the skillet and let them rest on a plate for about 5 minutes. This helps the juices redistribute and keeps the meat juicy.
