For the crust:

1 cup unsalted butter, softened

¾ cup granulated sugar

1 cup all-purpose flour

½ cup whole wheat flour

1 teaspoon vanilla extract

½ teaspoon salt

½ teaspoon baking powder

For the caramel layer:

1 cup brown sugar, packed

6 tablespoons unsalted butter

½ cup heavy cream

1 teaspoon sea salt

1 teaspoon vanilla extract

For topping:

½ cup chocolate chips (dark or milk depending on preference)

Additional sea salt for sprinkling

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare the crust: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Stir in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, whole wheat flour, salt, and baking powder. Gradually add the dry ingredients to the butter mixture, mixing until combined.

      Bake the crust: Press the crust mixture evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden. Remove from the oven and let the crust cool slightly.

        Make the caramel: In a medium saucepan over medium heat, combine the brown sugar, 6 tablespoons of butter, and heavy cream. Stir constantly until the mixture comes to a gentle boil. Allow it to boil for 2 minutes without stirring, then remove from heat and stir in the sea salt and vanilla extract.

          Assemble the bars: Pour the caramel mixture over the cooled crust, spreading it evenly. Bake for an additional 10-12 minutes until the caramel is bubbly.

            Chocolate topping: Remove the caramel bars from the oven and immediately sprinkle the chocolate chips on top. Let them sit for a couple of minutes to melt, then use a spatula to spread the melted chocolate evenly.

              Add finishing touches: Sprinkle additional sea salt over the melted chocolate for that perfect salted caramel finish.

                Cool and serve: Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment overhang to lift the bars out and cut them into squares.
