12 large jalapeño peppers

1 pound spicy Italian sausage (casings removed)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup finely chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1 tablespoon olive oil

1/4 cup breadcrumbs (optional, for crunch)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Jalapeños: Slice the jalapeños in half lengthwise and remove the seeds and membranes carefully (use gloves to protect your hands).

      Cook Sausage: In a skillet over medium heat, heat the olive oil. Add the sausage and cook until browned and cooked through, breaking it up with a wooden spoon as it cooks (about 5-7 minutes). Drain excess fat.

        Mix Filling: In a large bowl, combine the cooked sausage, cream cheese, cheddar cheese, green onions, garlic powder, smoked paprika, and black pepper. Mix until well incorporated.

          Stuff Jalapeños: Using a spoon or a piping bag, fill each jalapeño half with the sausage mixture, packing it in generously.

            Add Breadcrumbs (Optional): If you desire a crunchy topping, sprinkle some breadcrumbs over the stuffed jalapeños.

              Bake: Place the stuffed jalapeños on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the jalapeños are tender and the tops are golden and bubbly.
