Ingredients

2 pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved or quartered if large

1 head garlic, cloves peeled and minced

1/2 cup unsalted butter

1 tablespoon Worcestershire sauce

2 teaspoons dried rosemary

2 teaspoons dried thyme

1 teaspoon onion powder

1 teaspoon black pepper

1 teaspoon salt

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Prep the Beef: Season the beef stew meat with salt, black pepper, onion powder, rosemary, and thyme. Toss it well to ensure the meat is evenly coated with the seasonings.

Sauté Garlic: In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and mix in Worcestershire sauce.

Layer in Slow Cooker: Place the seasoned beef in the slow cooker, followed by the halved baby potatoes. Pour the garlic butter mixture evenly over the top.

Cook: Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, or until the beef is tender and the potatoes are cooked through. Stir occasionally if possible.

Serve: Once cooked, use a slotted spoon to transfer the beef bites and potatoes to a serving dish. Drizzle with any remaining garlic butter from the slow cooker.

Garnish: Sprinkle fresh parsley on top for a burst of color and freshness before serving.
