1 cup unsalted butter, softened

1 cup brown sugar, packed

¾ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup graham cracker crumbs

1 cup mini chocolate chips

1 cup mini marshmallows

Extra chocolate chips and marshmallows for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or line with cupcake liners.

    Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes.

      Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing until well incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs until evenly mixed.

          Mix Dry with Wet: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips.

            Fill the Muffin Tin: Using a cookie scoop or tablespoon, fill each muffin tin cup about halfway with the cookie dough. Press down gently to create an even base.

              Add Marshmallows: Place a few mini marshmallows on top of the cookie dough in each cup, pressing them in slightly.

                Bake: Bake in the preheated oven for about 12-15 minutes or until the edges are golden brown. The center may look slightly underbaked; that's okay!

                  Cool and Decorate: Once out of the oven, let the cookie cups cool in the muffin tin for 5 minutes before transferring them to a wire rack. Once cooled, top each cookie cup with an extra sprinkle of chocolate chips and a few mini marshmallows.
