1 ½ lbs flank steak (or skirt steak)

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 bell peppers (red and green), sliced

1 medium onion, sliced

Juice of 2 limes

Fresh cilantro, chopped (for garnish)

8 small flour or corn tortillas

Optional toppings: sour cream, guacamole, salsa

Marinate the Steak: In a mixing bowl, combine the olive oil, ground cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper to create a marinade. Add the flank steak, ensuring it is evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for enhanced flavor).

    Cook the Steak: Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Once cooked, let the steak rest for 5-10 minutes before slicing it thinly against the grain.

      Sauté the Vegetables: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced bell peppers and onion. Sauté until the vegetables are tender and slightly charred, about 5-7 minutes. Squeeze half of the lime juice over the veggies and stir well.
