Ingredients
  

1 cup crushed graham crackers

1/4 cup sugar

1/2 cup unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, diced

1/2 cup whipped cream (store-bought or homemade)

1/4 cup white chocolate chips (optional)

Extra crushed graham crackers for topping

Instructions
 

In a medium bowl, mix the crushed graham crackers, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a greased mini muffin tin to form a crust layer.

    Bake the crusts at 350°F (175°C) for about 5-7 minutes, or until lightly golden. Let them cool completely.

      In another bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Add in powdered sugar and vanilla extract, continue mixing until well blended.

        Gently fold the diced strawberries and whipped cream into the cream cheese mixture, being careful not to overmix to retain the lightness of the whipped cream.

          Spoon or pipe the cheesecake mixture over the cooled graham cracker crusts in the muffin tin, filling them just to the top.

            (Optional) Melt white chocolate chips in a microwave-safe bowl in 15-second intervals, stirring in between until smooth. Drizzle over the cheesecake bites for an extra touch of sweetness.

              Sprinkle the extra crushed graham crackers over the top for added crunch.

                Refrigerate the bites for at least 2 hours before serving to allow them to set.

                  Once set, gently remove the bites from the muffin tin, serve chilled, and enjoy the delightful flavor combination!
