2 cups fresh strawberries, hulled and sliced

1 cup plain Greek yogurt

1/2 cup honey (or maple syrup for a vegan option)

1 tablespoon lemon juice

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

In a blender or food processor, combine the fresh strawberries and blend until smooth. You can leave some small chunks for texture if desired.

    In a mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon juice, vanilla extract, and salt until well combined.

      Fold the blended strawberries into the yogurt mixture, stirring gently to combine.

        Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency (usually about 20 minutes).

          If you don’t have an ice cream maker, transfer the mixture to a shallow bowl and place it in the freezer. Stir every 30 minutes with a fork for about 3-4 hours, until it’s fully frozen.

            Once frozen, remove the yogurt and let it sit at room temperature for a few minutes to soften slightly before serving.
