2 cups fresh strawberries, hulled and halved

1 cup granulated sugar

1/2 cup water

1 teaspoon vanilla extract

1 tablespoon freshly squeezed lemon juice

Pinch of salt

Instructions
 

In a medium saucepan, combine the halved strawberries, sugar, and water. Stir gently to coat the strawberries with sugar.

    Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally. Allow it to simmer for about 10-15 minutes, until the strawberries soften and release their juices.

      Once the strawberries have cooked down, remove the saucepan from heat. Use a potato masher or fork to lightly mash the strawberries to your desired consistency. For a smoother syrup, you can use an immersion blender.

        Return the saucepan to low heat, and stir in the vanilla extract, lemon juice, and a pinch of salt. Cook for an additional 2-3 minutes to allow the flavors to meld.

          Remove from heat and let the syrup cool. Once cooled, strain it through a fine-mesh sieve into a clean jar to remove the solids, if desired.

            Store the syrup in an airtight container in the refrigerator for up to two weeks. Shake well before using.
