Ingredients
  

2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup teriyaki sauce (store-bought or homemade)

1 cup broccoli florets

1 bell pepper, diced (red or yellow for color)

1 carrot, shredded

1/2 cup green onions, chopped

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon ginger powder

1 tablespoon sesame oil

Salt and pepper, to taste

Optional: sesame seeds for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: Heat sesame oil in a large skillet over medium heat. Add the bite-sized chicken pieces and season with garlic powder, ginger powder, salt, and pepper. Sauté until the chicken is cooked through and golden brown, about 5-7 minutes.

      Mix Ingredients: In a large mixing bowl, combine the cooked rice, sautéed chicken, teriyaki sauce, broccoli florets, diced bell pepper, shredded carrot, and half of the green onions. Stir until well combined.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly across the bottom.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the mixture.

            Bake: Cover the casserole with aluminum foil (to keep it moist) and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish: Once out of the oven, let the casserole sit for 5 minutes. Garnish with the remaining green onions and optional sesame seeds for added flavor and presentation.

                Serve: Scoop out servings of the casserole while it's warm. Enjoy this tasty and comforting dish with friends and family!
