For the Chicken Marinade:

1 lb (450g) chicken breast, cut into thin strips

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 cloves garlic, minced

1 tablespoon ginger, grated

1 teaspoon turmeric powder

1 teaspoon ground coriander

1 teaspoon cayenne pepper (adjust to taste)

1 tablespoon lime juice

1 tablespoon vegetable oil

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon brown sugar

1 clove garlic, minced

1 teaspoon red chili paste (adjust for spiciness)

Water (as needed for consistency)

For Serving:

Fresh cilantro leaves (for garnish)

Lime wedges

Cucumber slices

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, turmeric, ground coriander, cayenne pepper, lime juice, and vegetable oil.

      - Add the chicken strips and coat them well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

        Prepare the Peanut Sauce:

          - In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and red chili paste.

            - Heat the mixture over medium heat, stirring until smooth and combined. If the sauce is too thick, add a little water to reach your desired consistency. Set aside.

              Skewer the Chicken:

                - Preheat your grill or grill pan over medium-high heat.

                  - Thread the marinated chicken strips onto skewers, making sure to leave a little space between each piece for even cooking.

                    Grill the Chicken:

                      - Place the skewers on the preheated grill and cook for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks.

                        Serve:

                          - Once cooked, remove the skewers from the grill. Serve hot with the peanut sauce drizzled on top or on the side for dipping. Garnish with fresh cilantro, lime wedges, and cucumber slices.
