8 oz (225 g) penne pasta

1 tablespoon olive oil

1 lb (450 g) Italian sausage (sweet or spicy, casings removed)

3 cloves garlic, minced

1 can (14 oz or 400 g) diced tomatoes, with juices

2 cups fresh spinach, chopped

1 teaspoon dried basil

1 teaspoon oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves for garnish

Cook the pasta: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sauté the sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes.

      Add garlic: Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.

        Add tomatoes: Pour in the diced tomatoes (with their juices) and stir to combine.

          Season: Stir in the dried basil, oregano, salt, and pepper, bringing the mixture to a simmer. Let it cook for 5-7 minutes to allow the flavors to meld.

            Incorporate spinach: Add the chopped spinach to the skillet and cook until it wilts down, about 2-3 minutes.

              Combine with pasta: Add the cooked penne pasta to the skillet and mix to combine, adding reserved pasta water a little at a time if the sauce seems too thick.

                Add cheese: Stir in the grated Parmesan cheese, mixing until everything is well coated and creamy.

                  Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves and additional Parmesan cheese on top.
