2 cans young green jackfruit in brine or water (not syrup)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup vegan BBQ sauce (store-bought or homemade)

4 whole-grain sub rolls

Fresh coleslaw (optional, for topping)

Pickles (optional, for topping)

Prepare the Jackfruit: Drain and rinse the jackfruit pieces. Remove the core and seeds, and use your fingers or forks to shred the jackfruit into bite-sized pieces resembling pulled meat.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and sauté for an additional minute until fragrant.

      Cook the Jackfruit: Add the shredded jackfruit to the skillet. Sprinkle in the smoked paprika, cumin, chili powder, salt, and pepper. Stir well to combine and cook for about 5-7 minutes, allowing the jackfruit to absorb the flavors.
