1 cup rice flour

1/2 cup cornstarch

1/2 teaspoon baking powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1/4 cup water (adjust if needed)

1 tablespoon nutritional yeast (optional for added flavor)

Oil for frying (e.g., coconut or vegetable oil)

Instructions
 

Prepare the Batter: In a large mixing bowl, combine the rice flour, cornstarch, baking powder, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and nutritional yeast (if using). Mix well.

    Add Water: Gradually add water to the dry mixture, stirring continuously until it forms a thick batter. The consistency should be similar to thick pancake batter. Let it rest for about 10-15 minutes.

      Heat Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

        Fry the Rinds: Using a spoon or small cookie scoop, drop small amounts of the batter into the hot oil. Fry in small batches to avoid overcrowding. Cook until golden and crispy, about 2-3 minutes on each side.

          Drain: Once cooked, use a slotted spoon to remove the vegan pork rinds from the oil and transfer them to a paper towel-lined plate to drain excess oil.

            Season and Serve: While still hot, sprinkle with a little extra salt or your favorite seasoning if desired. Allow them to cool slightly, then serve as a snack or appetizer with your favorite dipping sauce.
