Ingredients

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup granulated sugar (adjust to taste)

4 cups cold water

1 cup fresh or frozen raspberries (plus extra for garnish)

1 cup heavy whipping cream

1 teaspoon vanilla extract

Ice cubes

Lemon slices (for garnish)

Mint leaves (for garnish, optional)

Instructions

Make the Pink Lemonade Base: In a pitcher, combine the freshly squeezed lemon juice and granulated sugar. Stir until the sugar is completely dissolved. Add the cold water and mix well. If necessary, adjust sweetness by adding more sugar to taste.

Prepare Raspberry Puree: In a blender, add the raspberries and blend until smooth. If desired, strain the puree through a fine-mesh sieve to remove seeds, but this step is optional.

Combine Puree with Lemonade: Gently stir the raspberry puree into the lemonade base, creating a beautiful pink hue.

Whip the Cream: In a mixing bowl, add the heavy whipping cream and vanilla extract. Using an electric mixer, beat on medium speed until soft peaks form. Be careful not to over-whip the cream; it should be fluffy and pourable.

Serve: Fill glasses with ice cubes and pour the pink lemonade mixture over the ice. Top each glass with a dollop of the whipped cream.

Garnish: Decorate each glass with a few fresh raspberries, a slice of lemon, and a sprig of mint if using.

Enjoy: Serve immediately and enjoy the refreshing, whipped pink lemonade!
