Instructions

Preheat your oven: to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.

Mix dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Cream butter and sugar: In a large bowl, beat the softened butter until creamy, then add the granulated sugar and mix until light and fluffy.

Add egg and vanilla: Beat in the egg and vanilla extract until fully combined.

Incorporate buttermilk: Gradually mix in the buttermilk until the batter is smooth.

Combine dry and wet ingredients: Slowly add the dry ingredient mixture to the wet mixture, stirring just until combined. Be careful not to overmix.

Fold in blueberries and white chocolate: Gently fold in the fresh blueberries and white chocolate chips to the batter.

Fill cupcake liners: Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.

Bake: Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Remove from the oven and let cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

Prepare the frosting: In a small bowl, beat together the cream cheese and powdered sugar until smooth. Stir in the lemon zest for a fresh flavor.

Frost the cupcakes: Once the cupcakes are completely cooled, pipe or spread the frosting on top of each cupcake.

Garnish: Top each frosted cupcake with additional blueberries and a sprinkle of white chocolate chips for decoration.

Serve & enjoy: Serve your delightful White Chocolate Blueberry Cupcakes at room temperature and enjoy!
