8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/2 cup crushed graham crackers

1/2 cup fresh raspberries (or thawed frozen raspberries)

8 oz white chocolate, chopped or white chocolate chips

1 tbsp coconut oil (optional, for thinning chocolate)

Extra crushed graham crackers or chopped nuts for coating (optional)

Prepare the Cheesecake Mixture: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, blend until smooth and creamy.

    Add Crushed Graham Crackers: Fold in the crushed graham crackers until well incorporated. The mixture should be thick enough to hold a shape.

      Incorporate Raspberries: Gently press the fresh or thawed raspberries into the cheesecake mixture, being careful not to break them too much. The mixture should have swirls of raspberry throughout.

        Form the Balls: Using a small scoop or your hands, portion out the cheesecake mixture and roll it into bite-sized balls. Place them on a wax paper-lined baking sheet.

          Chill: Cover the baking sheet with plastic wrap and refrigerate the balls for at least 2 hours until they firm up.

            Melt the White Chocolate: In a microwave-safe bowl, combine the chopped white chocolate with the coconut oil (if using). Heat in 20-second intervals, stirring in between, until melted and smooth.

              Coat the Cheesecake Balls: Remove the chilled cheesecake balls from the fridge. Using a fork or toothpick, dip each ball into the melted white chocolate, ensuring it’s fully coated. Allow the excess chocolate to drip off.

                Add Coating (Optional): If desired, roll the chocolate-coated cheesecake balls in extra crushed graham crackers or chopped nuts for an added layer of flavor and texture.

                  Set and Serve: Place the coated cheesecake balls back on the wax paper-lined sheet and return them to the fridge for another 30 minutes to set. Once set, serve chilled and enjoy!
