Zucchini Lasagna with Ground Turkey

3 medium zucchinis, sliced lengthwise (about 1/4 inch thick)

1 pound ground turkey

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) ricotta cheese

1 egg

2 cups marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Olive oil for cooking

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Sprinkle the zucchini slices with salt and let them sit on a paper towel for about 15 minutes to draw out moisture. Pat dry with another towel.

    Cook the Turkey: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and the onion becomes translucent, about 3-4 minutes. Add the ground turkey, seasoning with salt, pepper, oregano, and basil. Cook until the turkey is browned and fully cooked, about 6-8 minutes.

      Mix the Ricotta: In a bowl, combine ricotta cheese, egg, a pinch of salt, and pepper. Mix until smooth.

        Assemble the Lasagna: In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer 1/3 of the zucchini slices evenly over the sauce, followed by 1/2 of the turkey mixture, half of the ricotta mixture, and 1/3 of the mozzarella cheese. Repeat the layering process, finishing with the remaining zucchini slices on top.

          Top It Off: Spread the rest of the marinara sauce over the final layer of zucchini, then top with the remaining mozzarella and Parmesan cheese.

            Bake: Cover the baking dish with foil (to prevent sticking, spray the foil with a little cooking spray). Bake in the preheated oven for 30 minutes. Remove the foil and bake for another 15-20 minutes, or until the cheese is bubbly and golden brown.

              Cool and Serve: Allow the lasagna to rest for 10-15 minutes before slicing. Serve hot and enjoy your healthy twist on a classic dish!
